WHAT WE REPAIR

Commercial Bakery Equipment We Cover:

Southeastern Wisconsin bakeries range from neighborhood shops laminating pastry by hand to in store departments baking for a whole supermarket. A-1 services the ovens, fryers and proofers on the hot side, the mixers, sheeters and dough equipment in production, the cold storage around them, and the exhaust, make up air and electrical service that keep the room working.

How Bakery Equipment Repair Works

From your first call to the next batch coming out of the oven, here’s how A-1 handles a bakery service call.

Call or Request Online

Call 414-404-9739 or request service online and tell us what’s happening: an oven that won’t hold temperature, a mixer grinding, a proofer that won’t humidify. Include the make and model if you can, and when your next bake starts, so dispatch can schedule around production.

Rapid Dispatch

A technician based in the Milwaukee area is assigned to your call, with emergencies prioritized. In winter, early morning bakery calls often mean icy roads before sunrise, so tell us your start time and we’ll plan to arrive before the ovens need to be loaded.

Diagnose & Repair

Your technician finds the root cause on site, which in a bakery can be the equipment, the room or the power: a failed element, a proofer water valve, an overheating bakery or an overloaded oven circuit. Repairs are made with parts from the truck when stocked, and ordered parts are explained before the technician leaves.

Test, Document, & Follow Up

The repair is tested under load, with a full bake cycle, a loaded mixer or a proof run, before sign off. The work is documented and covered by A-1’s 90 day parts and labor guarantee; a repeat of the same failure inside that window brings us back.

Highly Skilled Technicians

A-1 technicians train through Tech24 University on gas, electric and steam equipment, and bring an HVAC background most bakery equipment technicians don’t have, which matters when a proofing problem turns out to be the room, not the proofer.

We Stock the Most Commonly Used Parts

Trucks carry the parts bakery equipment wears out most: oven thermostats, igniters, heating elements, mixer belts, door gaskets and proofer water valves, so more repairs finish in one visit and production restarts sooner.

90-Day Guarantee

Every bakery repair carries A-1’s 90 day parts and labor guarantee. A repeat of the same failure within those 90 days is fixed on a return visit at no cost to you.

Planned Maintenance Programs

Maintenance can cover oven calibration, mixer gearbox and belt checks, proofer humidity testing and gasket replacement, scheduled before the holiday season and before summer heat, the two times bakery equipment works hardest.

All Fuel Types & Configurations

Gas, electric and steam injected ovens in deck, rack, rotary and convection configurations, from new combi ovens to long serving rack ovens that have baked for a generation.

Bakery HVAC, Hoods And Electrical

A-1 also services the exhaust hood, make up air, rooftop cooling and electrical circuits that bakery equipment depends on. When ovens trip breakers or the room is too hot to proof dough properly, one A-1 technician can fix the cause.

Why is my spiral mixer grinding or clunking?
URGENCYLIKELY CAUSES

High

Worn gears, failing bearings, a loose belt or a bowl drive problem. Those noises usually come before a failure, and a mixer that stops mid batch takes a whole production run with it. Stop the mixer and call rather than finishing the day on it.
Why can't my donut fryer keep up on paczki day?
URGENCYLIKELY CAUSES

High

A fryer that recovers slowly after each load usually has a weak burner or element, a thermostat reading wrong, or it’s simply being loaded beyond its capacity. On a day like Fat Tuesday, slow recovery means greasy product and a line out the door. Book a calibration and burner check in January.
Why does my oven keep tripping its breaker?
URGENCYLIKELY CAUSES

High

A shorting heating element, a failing contactor, loose connections or too much equipment on one circuit, often after a new oven or mixer was added. Repeated trips mean something is overheating. Stop resetting it and call; A-1 can trace it through the oven and the electrical supply.
Why is my bakery walk in freezer icing up?
URGENCYLIKELY CAUSES

Medium

Heavy door traffic during production, torn gaskets or a failed defrost heater or timer let moisture in and freeze on the coil. The freezer struggles to hold temperature, putting frozen dough and finished product at risk. Keep the door closed between trips and call if ice keeps building.
Why is my sheeter struggling with laminated dough for kringle and pastries?
URGENCYLIKELY CAUSES

Medium

A roller gap out of adjustment, a slipping belt or worn scrapers, sometimes made worse by butter that’s too cold or too warm for the room. Torn or uneven layers ruin laminated pastry, which is expensive to waste. Have the rollers and belt checked before the holiday rush.
Why is my deck oven baking unevenly or cracking its stones?
URGENCYLIKELY CAUSES

Medium

A failed element or burner zone leaves cold spots, and loading very cold dough onto hot stones can crack them through thermal shock. Uneven bakes mean rejected product and cracked stones mean downtime. Have the heating zones tested and let refrigerated dough temper before loading.
Why is my bakery so hot in summer that dough overproofs on the bench?
URGENCYLIKELY CAUSES

Medium

Ovens pour heat into the room, and an undersized or failing rooftop unit, a dirty coil or a make up air unit that isn’t tempering outside air can’t keep the bakery cool enough. Dough moves faster than your schedule and batches are lost. A-1 can check the equipment and the HVAC on one visit.
Why won't my proofer reach humidity in the middle of winter?
URGENCYLIKELY CAUSES

Medium

Heated winter air is very dry, so the proofer’s water system has to work harder, and a sticking water solenoid, a scaled steam generator or a weak heating element can’t keep up. Dough proofs slowly and bakes with a dull, cracked crust. Check the water supply, then call before the next morning bake.

Don’t let a down oven or mixer cost you a morning of production. Get an A-1 technician to your bakery.

FREQUENTLY ASKED QUESTIONS

Bakery Equipment Repair FAQ

Answers to the questions we hear most from bakery operators. Don’t see yours? Give us a call.

Do you offer bakery equipment repair in Oak Creek and the Milwaukee area?

Yes. A-1 Services Group provides bakery equipment repair and service from its Oak Creek office across southeastern Wisconsin, including Milwaukee, Racine, Kenosha and Waukesha.

We work with independent bakeries, donut and pastry shops, kringle bakeries and supermarket bakery departments. Technicians are based around the region, and emergency service is available 24/7.

Which bakery equipment brands can A-1 service?

A-1 services all major commercial bakery equipment brands, including deck, rack and convection ovens, spiral and planetary mixers, proofers, retarders, sheeters and fryers. Tell us the make and model when you call so the technician can bring the right parts.

Older equipment is welcome too. Plenty of Wisconsin bakeries still run ovens and mixers bought a generation ago, and with the right parts those units can often keep going.

Can A-1 fix the HVAC and electrical problems in my bakery too?

Yes. A-1 started as a heating and air conditioning company and also provides electrical service, so it can repair the exhaust hood, make up air, rooftop cooling and circuits that bakery equipment relies on, as well as the equipment itself.

That matters in bakeries because room temperature and power affect production. Dough that overproofs in a hot room and an oven that keeps tripping a breaker are both problems a single A-1 technician can trace and fix.

How should a bakery prepare its equipment for the holiday season?

Schedule maintenance in October, before holiday orders and kringle season peak in November and December. Have ovens calibrated, mixer gearboxes and belts checked, proofers tested and sheeter rollers adjusted, and replace worn gaskets.

Plan a second check in January if you run donuts or paczki for Fat Tuesday. Fryer calibration and burner service before that rush can be the difference between a record day and a line of unhappy customers.

Is it better to repair an aging oven or mixer, or replace it?

Repair when the unit is sound and the fault is an element, thermostat, belt or bearing. Consider replacing when a mixer gearbox or oven heat exchanger fails on an older unit, or repairs keep returning; a common rule of thumb is when one repair nears half the price of new.

If you replace, Wisconsin businesses may qualify for Focus on Energy incentives on qualifying efficient equipment, and a new oven may need an electrical upgrade that A-1 can handle.

Do you service in store and supermarket bakery departments?

Yes. A-1 services bakery departments inside grocery stores and supermarkets, including ovens, proofers, mixers, slicers, display cases and the walk ins behind them. Repairs are scheduled around store hours when possible.

For grocers with several stores, A-1 can put every location on one account with one number and one maintenance schedule, and coordinate bakery, deli and refrigeration service together.
